I was out hiking around the other day and stopped to gather some Devil’s Club (Oplopanax horridus) buds I spied along the trail.
The taste of the buds is a good mix between green and slightly piney. I find they are a good addition to a stir fry, but can be prepared how you like.
If you live here in WA or the surrounding areas, now is the time! The season is very short, as once the spikes on the buds get hard, they are inedible.
